Our experiments from recent years include a number of seasonal truffle flavors. We've crafted a Red Cedar truffle (originally as a benefit for Bark), using locally wildcrafted red cedar infused for us by Missy Rohs of the Arctos School of Botanical and Herbal Studies. She has also provided a damiana infusion which we combine with organic goji berries to create the Love Truffle. (Keep your eyes open for the coveted Love Truffle during the romantic month of February.)
We also have a Pear Brandy truffle which began as a custom flavor request from P:ear - a local charity helping homeless youth through art. Local Bartlett pears and Clear Creek Pear Brandy (also distilled in Portland!) make this truffle special, and we are always overjoyed to add this one to our collection when the pears are ripe. Quince Jellies can also be found at our farmer's markets and online in the fall.
We're always happy to fulfill special requests for custom batches of truffles. Previous orders have included exotic flavor combinations such as Lemon-Pink Peppercorn and Fig-Star Anise. Contact us with your idea, or let us devise something to please your palate!
When we're not playing with chocolate truffle flavors, we can often be found candying some unusual items - from cayenne peppers and habanero chilies to wild jelly tooth mushrooms! If you'd like us to candy something odd for you, we'd love to take on the challenge.
